
Comfort food lover’s rejoice!
Everyone loves a good casserole and this one is a low carb alternative to the classic Loaded Potato Casserole. Mashed Cauliflower takes the place of the potato, then I added in creamy elements like sour cream and shredded cheese {you can never have too much cheese!} and an overload of bacon flavors including diced thick cut bacon, Bacon Salt, and Bacon cream cheese! The result is this scrumptious Bacon Lover’s Loaded Cauliflower Casserole.

Bacon Lover's Loaded Cauliflower Casserole
Makes 6 servings
Ingredients
- 1 large head cauliflower
- 4 oz 1/2 a container bacon cream cheese spread
- 1/2 cup sour cream
- 1/4 cup green onions diced
- 8 slices bacon I like brown sugar, thick cut, cooked crisp and diced
- 1 cup Cheddar cheese or a blend, shredded
- 1/4 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- salt/black pepper to taste
- optional: sub bacon salt for salt
Instructions
- Preheat oven to 350 degrees.
- Wash and cut off stem from cauliflower then cut into smaller florets.
- Add to a steamer with water and steam until soft and a fork can pierce easily, about 30-40 minutes. Optional: you can also boil and drain.
- Add cauliflower to a large bowl, then using a potato masher mash until mostly smooth (some small chunks will remain).
- Mix in cream cheese spread, sour cream, green onion, Parmesan cheese, 6 slices of diced bacon, and seasonings.
- Pour into an 8X8 baking dish.
- Top with 1 cup shredded cheddar cheese and 2 slices of diced bacon.
- Bake for 30 minutes then let cool slightly before cutting into portions and serving.

Add chopped cauliflower to a steamer (or your can boil/steam in a pot on the stove) with water and steam until soft and a fork can pierce easily, about 30-40 minutes.
Add cauliflower to a large bowl, then using a potato masher mash until mostly smooth
(some small chunks will remain).
To make this a Bacon Lover’s dish I not only used bacon,
I also used Bacon Cream Cheese Spread and Bacon Salt!
Mix in cream cheese spread, sour cream, green onion, Parmesan cheese,
6 slices of diced bacon, and seasonings.
Pour into an 8X8 baking dish.
Top with 1 cup shredded cheddar cheese and 2 slices of diced bacon.
Bake at 350 degrees for 30 minutes.
Let cool slightly then cut into squares and serve.
