This classic casserole is one of my favorites to make all year long on busy family nights. It couldn’t be easier to throw together and it’s a delicious hearty meal. I substituted a few of the traditional ingredients for low fat ones to cut some of the fat and calories.
Chicken Divan Casserole
Makes 4 servings
Ingredients
- 2 cups or 2 large skinless/boneless chicken breasts cooked and cubed
- 2 cups or 1 large head of broccoli steamed and chopped
- 10 oz can of condensed low fat cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1/2 cup low fat sour cream
- 1/4 cup skim milk
- 1/4 cup white wine
- 1/2 tsp curry powder
- 1/2 cup panko breadcrumbs
- 1/2 cup Parmesan cheese {grated or shredded}
Instructions
- Preheat oven to 350 degrees.
- Grease an 8X8 casserole dish.
- In a small bowl add Parmesan and panko and mix well. Set aside.
- Mix together the cooked chicken, steamed broccoli, soup, cheese, sour cream, milk, wine, and curry powder in a large bowl until well combined.
- Pour into the casserole dish.
- Sprinkle the Parmesan panko mix evenly on top.
- Bake for 30 minutes, until golden and bubbly.

You can cook your chicken any way you like but I enjoy poaching my chicken breasts in simmering chicken broth.
Steam broccoli until tender, about 20 minutes.
Chop broccoli into bite size pieces.
In a small bowl add Parmesan and panko and mix well. Set aside.
Mix together the remaining ingredients:cooked chicken, steamed broccoli, soup, cheese, sour cream, milk, wine, and curry powder in a large bowl.
Stir until well combined.
Pour into a greased casserole dish.
Sprinkle the Parmesan panko mix evenly on top.
Bake for 30 minutes at 350 degrees, until golden and bubbly.
Scoop onto plates and serve. Enjoy this hearty meal all year long!
