Pink Mimosa Punch With Fruit Filled Ice Ring
Ingredients
For the ice ring:
- 1 large orange cut into thin slices
- 1 pint raspberries
For the punch:
- 2 cups Simply Orange® juice
- 1 750 ml bottle blush champagne
- 1/4 cup raspberry syrup
- raspberries for garnish
Instructions
For the ice ring:
- Add a shallow amount of water to the bottom of a small/medium size bundt pan.
- Place half of the orange slices and raspberries in the pan.
- Freeze for at least 30 minutes, until solid.
- Add water to the pan filling 3/4 full then add remaining fruit.
- Freeze overnight.
- To remove from the pan, run warm water over the bottom of the pan and the ring will slip out.
For the punch:
- Add decorative ice ring, fruit side up, to the center of the punch bowl.
- Now add Simply Orange® juice, raspberry syrup, and chilled champagne. Stir.
- Serve in chilled glasses garnished with raspberries.

Start by making the ice ring the night before your party.
I wash and cut my fruit. I use bright colored raspberries and orange slices.
Add a shallow amount of water to the bottom of a small/medium size bundt pan.
Place half of the orange slices and raspberries in the pan.
Freeze for at least 30 minutes, until solid.
Add water to the pan filling 3/4 full then add remaining fruit.
Freeze overnight.
To remove from the pan to use run warm water over the bottom of the pan and the ring will slip out.
Place the ice mold, fruit side up, in the punch bowl.
Now add 2 cups Simply Orange® juice.
Then 1/4 cup raspberry syrup.
And finally a bottle of chilled blush Champagne.
This filled my bowl about halfway, which was the perfect amount for my guests.
Stir then serve in chilled glasses garnished with raspberries.
Drinks and snacks ready in minutes. That’s my kinda party food!
