Easter almost here and that means that most of us will have a plethora of boiled eggs to use up after all the Easter egg hunts and decorating.
This Creamy Egg Salad is a delicious, extra creamy, and plenty filling egg mixture for topping salads, crackers, and sandwiches.
You are going to love it as much as we do!
Creamy Egg Salad
Makes 4 servings
Ingredients
- 6 peeled hard boiled eggs chopped
- 4 ounces {1/2 box} cream cheese softened
- 1/4 cup mayonnaise {I like Duke's}
- 1/2 tsp sugar
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- salt/pepper to taste
Instructions
- In a medium bowl add the cream cheese and blend with a mixer or by hand until smooth.
- Then add the remaining ingredients except the eggs. Mix well.
- Gently stir in the eggs.
- Chill until ready to serve.
- Delicious on sandwiches, salads, and crackers.

I start with 6 eggs, hard boiled and peeled. I add them to my egg slicer a few times until they are chopped well.
The base of this dressing is mayo and, my favorite, cream cheese.
In a medium boil add the cream cheese and mix with a mixer or by hand until smooth.
Then add the remaining ingredients except the eggs. Mix well.
Gently stir in the eggs.
Chill until ready to serve.
Delicious on sandwiches, salads, and crackers.

I love egg salad but have never tried a recipe using cream cheese. This one is definitely next up for me to try!
