but since we have had our fair share of chocolate and candy all week
long, I wanted to give it a healthy twist. So these cupcakes are “no bake” and actually they’re not cupcakes at all! They are a simple mini cupcake cup filled with a scoop of Vanilla Greek Yogurt and Homemade Whipped Cream and topped with a Strawberry Heart and Sprinkles! Not only tasty and festive but also kid friendly and fun to eat!

Frozen Yogurt Cupcake Bites with Strawberry Hearts
I did not put measurements here b/c you can make as little or as many as you want!
Ingredients
- Whipped Cream
- Vanilla Greek Yogurt
- Strawberries stems removed and sliced
- Sprinkles
Instructions
- Slice strawberries thin and make a "V" cut out at the top of each strawberry to make strawberry hearts.
- Wrap up and refrigerate until later.
- Spread out mini cupcake liners on a sheet pan.
- Using a small ice cream scoop or a spoon place one scoop of Greek yogurt in each cupcake cup.
- Repeat with one scoop of whipped cream in each.
- Place the tray in the freezer for an hour and up to overnight.
- About 30 minutes before you want to serve, take out of the freezer, top with a strawberry heart and sprinkles.
- Store at room temp until serving to let the whipped cream soften slightly.
- Serve- no spoons required! Perfect for kids. My toddler LOVED them!

Beautiful strawberries are a favorite in our house!
Remove the stems and slice each strawberry.
Then to make strawberry hearts, using a paring knife, cut out a “V” from each top to make a heart shape.
I found these adorable “party cups” at Walmart in the baking aisle. I
prefer these over traditional cupcake liners since these hold up better
and are just too cute!

A small ice cream scoop is the perfect size!
Put a scoop of vanilla Greek yogurt in each cup then topped with scoop of whipped cream.
Perfect mini faux cupcakes! Place in the freezer to set for at least an
hour and up to overnight.

First n the beginning of the week, we celebrated at an FRG Valentine’s lunch I organized for the wives and children in Ashton’s unit. We dined at a local BBQ joint and set up a dessert table with sweet treats we brought to share.

For Valentine’s Day we drove to Beaumont, TX and spent the day hanging out
in town. Our first stop: PeiWei Asian Diner! Hands down one of my fave restaurants! Ava likes their Orange and Ginger Edamame and Wonton Soup and I always order Pad Thai!
After cruising the mall and checking out Target, my girl was tired (and so
was Mommy!). So we skipped our planned Chuck E. Cheese visit and had an
early dinner at Red Lobster. Red Lobster asked me to dine on their new
Lobster Fest menu and write a review (coming soon!) and I thought

Ava enjoyed coloring, Cheddar Bay Biscuits, and dipping everything in dressing!

I made Hot Pink Decked Out Hot Chocolate for myself to celebrate the end of a wonderful Valentine’s Day.
Then my honey and I were able to talk before bed and we made this corny but cute pic!
