Oh ya’ll there’s nothing I love more than a savory brunch and some girl time! So last week my friend Molly came over and we had the ultimate girl’s day: brunch, chick flick, and crafting! My idea of the perfect brunch includes 4 things:
1. fresh, juicy fruit
2. hot out of the oven sweet muffins
3. savory quiche or casserole
4. mimosas
Unfortuantely, Molly and I are both preggers so number 4 didn’t make the cut but I made us Strawberry Lemon Slushies instead! (Puree a can of frozen lemonade with frozen strawberries and 1 cup water. Freeze for 4 hours than mix in ginger ale! Perfect for the kiddos or your pregnant friends that are missing out on the bubbily mimosas!)

Brunch Yogurt Streusel Muffins
Ingredients
For the muffins:
- 4 tbsp 1/2 stick unsalted butter, melted and cooled
- 2/3 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1 cup vanilla yogurt
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
For topping:
- 1/2 cup chopped pecans
- 1/3 cup packed light brown sugar
- 1/2 tsp cinnamon
- 2 tbsp unsalted butter melted
Instructions
- Preheat oven to 375 degrees.
- Line a muffin pan.
To make the streusel topping:
- Combine all streusel ingredients in a bowl and mix together.
- Place the bowl in the freezer.
For the muffins:
- Mix flour, baking soda, cinnamon and salt together in a bowl.
- In a different large bowl, whisk butter, sugar, eggs, vanilla, and yogurt.
- Combine the dry and wet ingredients together and mix well.
- Using a scoop, fill each muffin cup with batter.
- Take your streusel topping out of the freezer and stir until crumbly.
- Scatter topping on top of each muffin.
- Bake for 17 minutes or until golden.

I like to use a medium ice cream scoop to fill each muffin cup with batter.

Hot out of the oven!
I added beautiful ripe strawberries with powerder sugar and Quiche Lorraine
to our brunch menu and we were ready to dig in!

Molly made a baby tutu! Seriously the Cutest. Thing. Ever! Total cost: about $5!
Hair bows galore. Thank goodness we’re having baby girls!
I made a decorated light switch cover and baby AVA name blocks
simply using scrapbook paper and mod podge!
I can’t wait to use these in my maternity pictures next week! And they match her nursery perfectly~
My first successful craft project…an Ava name sign to go over her crib. I just stapled fabric to canvas, painted wood letters lavender and used mod podge to glue to the board. Then decorated with flowers! I love it!
