Ingredients:
Serves 4-6

1 quart {4 cups} water
-
3/4 cup sugar
-
2/3 cup Torani coconut syrup {I used sugar free}
-
1/4 cup toasted, shredded coconut, for garnish {optional}
Directions:
-
In a medium saucepan, stir together sugar and water.
-
Bring to a boil over medium-high heat, stirring occasionally until sugar has completely dissolved.

Once mixture has come to a boil, remove from heat and let cool completely.

Stir in coconut syrup.

Pour mixture into a 13×9-inch baking dish or similar shallow pan.

Cover with plastic wrap and freeze approximately for an hour.

Remove from freezer and using a fork, scrape and stir to break up ice crystals.
-
Cover again and return granita to freezer for at least another 2-3 hours until firm {up to overnight}.

Remove from freezer and scrape and stir with a fork again, until it is the texture of fine snow.

To serve, spoon granita into chilled glasses or bowls.

Garnish with a sprinkle of toasted coconut.

Serve immediately.
