I sub mashed avocado for butter in this recipe and then add two types of chocolate and two types of sugar for an out of this world chocolate lovers treat!

Double Chocolate Avocado Brownies
Ingredients
- 2 large ripe avocados peeled and mashed
- 1/2 cup Imperial Sugar Extra Fine Granulated Sugar
- 1/2 cup Imperial Sugar Light Brown Sugar
- 4 eggs
- 1 cup Rodelle Gourmet Baking Cocoa
- 1 cup semi sweet chocolate chips
- 1/2 cup flour
- 1 tbsp vanilla
- 1/2 tsp salt
Instructions
- Preheat the oven to 350 degrees.
- In a large mixing bowl add eggs and avocado.
- Mix on medium speed until combined.
- In a separate mixing bowl add flour, brown sugar, white sugar, salt, and cocoa. Mix well.
- With the mixer running on low, slowly pour the dry ingredients into the avocado.
- Once it is combined well turn off the mixer.
- Add the vanilla and the chocolate chips and gently mix in with a spatula.
- Pour into a greased 8X8 baking dish, smoothing the top and filling in all the corners.
- Bake for 30-35 minutes then let cool before cutting into squares.

Isn’t it exciting when you get the perfect avocado?!
I had to keep myself from eating it all up!
Mash two ripe avocados in a bowl.
Add 4 eggs and avocado to a large mixing bowl.
Mix on medium speed until combined.
I love using brown sugar for baking for the rich molasses flavor.
For this recipe I decided to use two types of Imperial Sugar : brown and white.
In a separate mixing bowl add both sugars.
Then add flour, salt, and cocoa. Mix well.
I used Rodelle Baking Cocoa – I love the rich chocolate flavor- for these brownies.

I sift my cocoa {and flour too} when adding it to the bowl.
This is optional it just makes it finer and gets rid of clumps.
With the mixer running on low, slowly pour the dry ingredients into the avocado.
Once it is combined well turn off the mixer.
Time for more chocolate!
Ava loves to help with this part {and snack on the chocolate chips too}!

Bake for 30-35 minutes until a tooth pick inserted comes out clean.
Let cool before cutting into squares.
These thick and extra chocolatey brownies are moist and delicious!
You would never know they have avocado baked into them!
