It is the last day of summer and even though I love fall I am not ready to say goodbye to all the things we love about summertime in the south. Picnics and cookouts, blowing bubbles with Ava, watching her run around the splash park or swim in the neighborhood pool, festivals and farmers markets, and the delicious summer produce we love to eat like corn, berries, and of course watermelon.
Today I wanted to share a copycat recipe with you from Bonefish Grill.
I dined there with my family for my birthday this year and I tried their Watermelon Martini. It was divine, y’all and I knew I wanted to make my own version at home.
They use Cucumber Vodka in theirs but I found a Watermelon Vokda that tasted just as good.
This is a simple and refreshing cocktail that’s perfect for summertime {or early fall too, right?}.

Ingredients:
Makes 1 martini
- 2oz Vodka {I used Smirnoff Watermelon}, chilled
- 1 1/2 tbsp simple syrup {recipe below}
- 1/2 tbsp lemon or lime juice
- 2 – 1 inch cubes of seedless watermelon
- 2 – 1 inch cubes seedless watermelon, frozen
Directions:
- Muddle {smash} two pieces of cubed seedless watermelon in the bottom of a cocktail shaker.
- Add chilled vodka and 1 tbsp simple syrup.
- Add top and shake then strain into a chilled martini glass.
- In a small bowl/glass mix 1/2 tbsp lemon or lime juice with 1/2 tbsp simple syrup.
- Add to the martini.
- Finish with a skewers of 2 frozen watermelon cubes.
- Sip away and enjoy!
How to make Simple Syrup
{for sweetening cocktails and drinks like lemonade}
- Bring 1 cup of water and 1 cup of sugar to a boil.
- Stir until sugar dissolves completely.
- Let cool.

Simple Syrup is easy to make and perfect for sweetening drinks like this martini and
even lemonade and tea!
Add 1 cup water and 1 cup sugar to a saucepan and bring to a boil.
Stir until sugar is dissolved then let cool completely.
These are addicting! Cut a few slices of watermelon into small cubes and freeze.
You’ve got a yummy frozen watermelon snack or watermelon ice cubes garnishes for drinks!
I let thaw slightly then skewer a few cubes as a garnish.
Now it’s time for the martini!
Muddle {smash} two pieces of cubed seedless watermelon in the
bottom of a cocktail shaker.
Add chilled vodka – I used Smirnoff Watermelon.
Now add 1 tbsp simple syrup.
Add the lid to your shaker.
And….shake, shake, shake!
I like to chill my cocktail glasses in the freezer first so they are nice and cool.
Strain your martini into the chilled glass.
Now in a little bowl mix together 1/2 tbsp lemon juice and 1/2 tbsp simple syrup.
Add the lemon juice {or you can use lime} mixture to the martini.
Garnish your martini with a few frozen watermelon ice cubes.
Sip away and pretend it’s still summertime!
