This simple recipe for jazzing up boxed brownies is perfect for St Patrick’s Day!
They are chewy and decadent and have a light mint flavor that is a delicious combo with the rich chocolate brownie.

Fudgy Double Mint Brownies
Ingredients
- 1 box Chocolate Fudge brownie mix
- ingredients required on the back of the box usually water, oil, egg
- 1 1/2 cups Andes mints roughly chopped and divided
- 1 green mint candy cane crushed (for topping)
Instructions
- Preheat oven to 350 degrees.
- Prepare brownie mix according to box and mix well.
- Gently mix in 1 cup chopped Andes mint.
- Pour into a greased 8x8 baking dish.
- Spread out and smooth on top.
- Bake for 30 minutes until cooked through but still soft and fudgy inside.
- Remove from oven and immediately sprinkle on remaining chopped chocolate.
- It should melt some and you can spread to cover the top.
- Finally, sprinkle on crushed green candy canes all over.
- Let cool before cutting into squares and serving.

You can use whatever chocolate mint you would like for these brownies.
I like Andes chocolate mint thins (just like Olive Garden) but I have also used these mint creme chocolate bars from Aldi.
Prepare brownie mix according to box. Mine required water, oil, and egg.
Unwrap all the Andes mints and coarsely chop.
Gently mix in 1 cup chopped Andes mint.

You need to crush a green candy cane. You can do this in a baggie with a rolling pin like I did or in a food processor.
Try to keep it small but not all the way to dust! You want to see the green color and have a little crunch on top of your brownies.
Finally, sprinkle on crushed green candy canes all over.
They should stick onto the melted chocolate just like sprinkles.
Let cool before cutting into squares and serving.
