This hot pink cake in a mug is an easy to make layered dessert inspired by the Barbie movie.
Make it for a girls movie night or a Barbie themed party!
Hot Pink Barbie Layered Mug Cake
Ingredients
- 8 tbsp flour divided
- 1/2 tsp baking powder
- 2 tsp sugar
- 4 tbsp milk
- 1 tbsp vegetable oil
- 2 tbsp Jell-O dry mix I used Starburst pink flavor- not sugar free
- pink food coloring icing coloring works well too
- Whipped cream for topping
- pink sprinkles mix for topping
Instructions
- Combine half of the first six ingredients in a large, tall mug.
- Mix well with a fork.
- Cook in the microwave for 1 minute. Let cool. Repeat with another mug and remaining ingredients.
- Top one of the cooled cakes in the first mug with whipped cream then remove the second
- small cake from other mug and add on top of the whipped cream in the first mug.
- Top with a swirl of whipped cream again and then add sprinkles and any other decorations (I used pink barbie shoes).
- Serve immediately and enjoy!

I made this version pink inspired by the new Barbie movie.
I used Starburst pink Jello mix, but after I made it the first time I decided to make it brighter by adding pink food coloring.
