Happy Fat Tuesday!
To celebrate, my little helpers and I made this fun and festive tricolored Mardi Gras Cake for dessert!
My kiddos were so excited to bake a Mardi Gras Cake this year!
Missouri doesn’t really celebrate Mardi Gras here but we still had our cake and red beans a rice for dinner to celebrate then we made masks to wear!
I remember going to Mardi Gras parades in Florida and Alabama when I was younger but I never really got into them until I had kids and moved to Louisiana. Every single city celebrated Mardi Gras for weeks there with not just parades but parties, balls, luncheons, and all out events.
Since we were in Louisiana for almost six years, we got to be pretty Mardi Gras crazy and we sure to miss the celebration!
What is Mardi Gras?
Mardi Gras (/ˈmɑːrdi ˌɡrɑː/), or Fat Tuesday, refers to events of the Carnival celebration, beginning on or after the Christian feasts of the Epiphany (Three Kings Day) and culminating on the day before Ash Wednesday (known as Shrove Tuesday). {From Wikipedia}
Mardi Gras Cake
Ingredients
- 1 box white cake mix {I used French Vanilla}
- 3 eggs
- 1/2 cup vegetable oil
- 1 cup water
- green food/icing coloring
- purple food/icing coloring
- yellow food/icing coloring
- 2 oz bag green candy melts
- 2 oz bag purple candy melts
- gold coin sprinkles
Instructions
- Preheat oven to 325 degrees {350 for glass pans}.
- Grease your pan. I used a flower silicon bundt pan.
- Mix together cake mix, eggs, water, and oil in a large bowl.
- Beat with a mixer on medium speed for two minutes.
- Pour batter into three separate bowls.
- Add green color to one bowl, purple to another, and yellow to the last. Mix until fully combined and brightly colored.
- Pour three colors into the baking pan, in multiple rows. You can swirl or leave in thick rows.
- Bake for 38-42 minutes until golden and tooth pick in the center comes out clean.
- Remove from oven and let cool.
- When it is cooled completely remove from pan.
- Melt green candy melts and purple candy melts in two bowls until smooth.
- Drizzle both colors all over the top of the cake.
- Finally add mini gold coin sprinkles all over.
- Slice and serve.

If you cannot find purple like me you can use white and add purple color.
I thinned it out a bit with milk.
Mix until smooth.
Drizzle both colors all over. The crazier the better!
I found these Wilton brand mini gold coin sprinkles and added these on top.
Don’t forget the lucky baby! It can be hidden under the cake or cut a piece out
and place it in before decorating.
The baby symbolizes luck and prosperity to whoever finds it in his/her slice of cake.
Slice and serve!
