These mini baked donuts are packed full of pineapple, carrots, and warm spices then topped with powdered sugar and the cutest bunny ears!
Mini Carrot Cake Donut Bunnies
Makes: 36 Mini Donuts
Ingredients
- 1/2 cup butter softened
- 1 egg
- 2/3 cup brown sugar
- 2/3 cup vanilla yogurt
- 1/2 cup crushed pineapple drained
- 1 cup shredded carrot
- 1 tsp vanilla
- 2 cups flour
- 1 tbsp baking powder
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1 cup powdered sugar to coat
Instructions
- Preheat the oven to 350 degrees.
- Grease a mini donut pan.
- In a medium bowl, whisk together the dry ingredients: flour, baking powder, salt, cinnamon, and nutmeg.
- In a large mixing bowl, cream together softened butter and brown sugar.
- Add egg, vanilla, and yogurt.
- Slowly add in the bowl of dry ingredients and mix until fully combined.
- Now, using a spatula, gently fold in the carrots and pineapple.
- Transfer the batter to a piping {or ziploc} bag.
- Pipe the batter into each donut cavity.
- Bake the donuts until a toothpick inserted into a donut comes out clean, about 8 minutes.
- Once the donuts cool add them, in batches, to a large freezer size zip top bag then add powdered sugar.
- Shake to coat then remove to a plate.
- Top each donut with a bunny ear pick and serve or wrap as gifts.
