These sunny little cookies are a fun party dessert to make this spring and summer.

Sunshine Cookies
Ingredients
- 12 Golden Sandwich Cookies like Oreos
- 1 small bag of candy corn
- 24 candy eyeballs
- 1 tube black writing icing
- 1 jar lemon frosting
- 1 jar gold or yellow sanding sugar sprinkles
Instructions
- Open cookies and spread frosting inside.
- Press 5-6 candy corn, white tip side down, in the frosting so that the ends of the candy corn are visible outside of the cookie.
- Press the top cookie back on then frost the top of the cookie.
- Sprinkle on gold sanding sugar then add 2 candy eyeballs in the center and use the writing icing to add a mouth.
- Serve this happy treat for a summer picnic, eclipse party, space themed movie night, or just because!
