Cheesy Broccoli Casserole
Ingredients

carton Pacific Foods Cream of Mushroom Condensed Soup
2
heads of broccoli
cleaned and trimmed
1
large shallot
diced
2
cups
cooked pasta
I like Veggie Rotini

tbsp
butter
divided
1/4
cup
flour
2
cups
skim or low fat milk
1 1/2
cups
shredded cheese
1
clove
garlic
pressed
salt/white pepper
to taste
Instructions
Preheat oven to 350 degrees.
Steam broccoli until tender and then chop into bite size pieces.
Heat a skillet over medium and add 2 tbsp butter (or sub olive oil).
Add shallots and garlic and cook until softened and browned. Remove from heat.
In a saucepan add remaining 3 tbsp butter and flour. Heat over medium and whisk until combined.
Slowly whisk in milk until combined then add cheese and salt and white pepper. Whisk until melted.
In a large bowl mix together broccoli, cooked pasta, shallots, soup, butter, and cheese sauce.
Pour mixture into a 8X8 baking dish.
Bake for approx 30 minutes until golden and set.
Try not to eat the whole pan! This casserole is addicting!
