Preheat oven to 300 degrees.

Coat a skillet with non stick spray and heat over medium.

Add a tortilla, top with 2 slices turkey, and a small handful of shredded cheese (about 1/4 cup), and top with another tortilla.

Let cook for a minute then flip over and lightly brown the other side and heat through.

Remove to a baking sheet and repeat with remaining tortillas and fillings until you have four quesadillas on a baking sheet.

Add 2 pieces sliced cheddar cheese to the top of each quesadilla (I cut one slice in half to try to fill most of the space on the tortilla). Then I cut a circle of sliced mozzarella cheese (I traced the bottom of the olive cup with my knife for the circle) and place that in the center for the eye on each tortilla.

Next arrange the sliced olives on top of the cheese to make the minion googles and eye. Then I added half a slice for a smile and a couple chopped pieces on top for hair.

Bake at 300 degrees for a few minutes, just enough to melt the cheese.

Let cool slightly then cute into triangles and serve.
