Mini Carrot Cake Donut Bunnies
Makes: 36 Mini Donuts
Ingredients

vanilla yogurt

crushed pineapple

shredded carrot

vanilla

flour

baking powder

tsp
cinnamon

tsp
nutmeg

tsp
salt

powdered sugar
to coat
Instructions
Preheat the oven to 350 degrees.
Grease a mini donut pan.
In a medium bowl, whisk together the dry ingredients: flour, baking powder, salt, cinnamon, and nutmeg.
In a large mixing bowl, cream together softened butter and brown sugar.
Add egg, vanilla, and yogurt.
Slowly add in the bowl of dry ingredients and mix until fully combined.
Now, using a spatula, gently fold in the carrots and pineapple.
Transfer the batter to a piping {or ziploc} bag.
Pipe the batter into each donut cavity.
Bake the donuts until a toothpick inserted into a donut comes out clean, about 8 minutes.
Once the donuts cool add them, in batches, to a large freezer size zip top bag then add powdered sugar.
Shake to coat then remove to a plate.
Top each donut with a bunny ear pick and serve or wrap as gifts.
