Pecan Snowball Cookies
Makes 24 cookies
Ingredients
1
cup
butter
softened
2
cups
powdered sugar
divided
1
tsp
vanilla
2
cups
flour
1
cup
pecans
finely chopped
Instructions
In a large mixing bowl, add butter and 1 cup powdered sugar.
Beat with a mixer until fluffy.
Add vanilla and slowly add flour and mix until just combined.
Fold in chopped pecans with a rubber spatula until mixed well.
Cover the bowl and chill in the fridge for 30 minutes.
Preheat oven to 350 degrees.
Scoop out dough and roll into golf ball size dough balls.
Place in rows on a lined baking sheet.
Bake cookies for 14 minutes.
Remove from oven and let cool slightly then while cookies are still warm, roll them in remaining 1 cup powdered sugar.
Place cookies on a cooling rack and let cool completely.
Roll in powdered sugar again then serve or store in a sealed container.
